Granola Bars

I have made many different variations of granola bars. I have to admit, I’ve never made the same batch twice. Granola bars are great because they are very versatile. You can just use whatever you have on hand at the time, and more than likely, they will be great.

This is a recipe for Almond Butter Banana Bread Granola Bars.

Ingredients

  • 2 cups rolled oats
  • 2 very ripe bananas, mashed
  • 2 tbsp ground flaxseed (if you have, add chia seeds, hemp seeds, or sunflower seeds)
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 1/2 cup chopped pitted dates (raisins, chocolate chips, or coconut works too)

Directions

Preheat oven to 350°. Line an 8×8 inch baking pan with aluminum foil, and grease with coconut oil or olive oil.

In a large bowl, combine all ingredients (oats, mashed bananas, flaxseed, cinnamon, salt, honey, almond butter, vanilla extract, dates).

Pour mixture into baking pan and smooth out evenly. Bake for 25-30 minutes, until you see the edges turning brown.

Remove and let cool for at least 10 minutes before cutting.

These bars are not only easy to make, but they’re super tasty and basically as nutritious as you can get. The oats, bananas, and dates give you the unrefined carbs and fiber that you need, while the flaxseed (and any other seeds you add) and almond butter provide you with all those healthy fats your body uses for digestion and brain power.
