Honey Cinnamon Glazed Carrots with Walnuts

Hey rebels! It’s Christmas time in Miami!!! …which means nothing. So I wanted to bring some wintery flavors into my life to get me in the mood. I love carrot anything, raw carrots, cooked carrots, carrot cake, carrot juice.. all of it. So I decided to make this sauteed carrot dish with a wintery feel to it. Hope you all enjoy it as much as I did–



  • 1 bag regular carrots
  • 3 tbsp olive oil
  • 2 tsp minced garlic
  • 1 cup chopped walnuts
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 branch fresh mint leaves (optional)
  • Raw honey (to drizzle)


Heat a medium saute pan with the olive oil. While it’s heating, peel the carrots, chop the walnuts and mint leaves.

Reduce the heat to low, and add the garlic to the pan. After the garlic browns (which is very quickly) add the carrots, cinnamon, salt, mint, and walnuts. Bring heat to medium and cover. Let cook for about 10-15 mins, until the carrots are soft enough to be cut through with your wooden spoon.

Pour everything into plate, and drizzle with raw honey. Enjoy!
