Loaded Sweet Potato

Hey Rebels! I’ve been studying for my RD exam, so I haven’t had as much free time to cook, but I wanted to post this super easy recipe for you guys. This one fully encompasses a true rebel recipe in that you can really do whatever you want with it. I’m just here to give you guys the inspiration. This is a recipe for a fully loaded sweet potato. This is a contrasting take on it’s evil twin: the Loaded Baked Potato dun dun dunnnn (hehe jk I love those). But if you have a sweet tooth, this is the perfect dish to satisfy your craving. I’d say if you use as many nuts and seeds as I do, it’s probably around 7 g of protein. This definitely isn’t enough protein for a meal (for me at least), so I usually couple it with some chicken or soft boiled eggs (see recipe).  I hope you all enjoy it! Feel free to be creative and add any other sweet toppings you have in the kitchen.



  • 1 sweet potato

Topping ideas:

  • berries
  • walnuts
  • hemp seeds
  • flax seeds
  • chia seeds
  • unsweetened shredded coconut
  • raw honey
  • cinnamon
  • nutmeg
  • peanut butter
  • almond butter
  • chocolate chips
  • granola
  • raisins


Wash raw sweet potato under running water to remove the dirt. Stab it with a fork a few times. Put it in the microwave for about 5 minutes (depending on how big the potato is), turnover at 3 mins.

Slice the potato open and add all your toppings. Eat with a fork and knife and make sure you eat the skin! It contains both soluble and insoluble fiber. Enjoy!
